Stanton & Co. | Rosebery

Stanton & Co. is located on the first floor in The Cannery, Rosebery. We're foreign to Rosebery and had no idea a hidden gem like The Cannery existed. We were invited to celebrate Stanton & Co's first birthday and a new Modern Australian menu launch. Stanton & Co. is the latest venue from Parlour Group. We sampled a couple dishes from their new menu and our thoughts are provided below. Before we get started, the mission statement shared on the evening really connected with us. "To provide the most memorable unique dining experience to all guests"

Natural Oysters
On Wednesday, Thursday and Friday between 5pm - 6pm, oysters are only $1.50 (minimum half a dozen) with a drink. As the sign says "shuck yeah" otherwise, oysters are normally $4. If you're a local, definitely take advantage of this awesome 'oyster hour'.

Spanner Crab Taco
Before we were seated. we enjoyed a cocktail, beer, oysters and spanner crab tacos. There were plenty to go around on the evening so we were able to taste this multiple times. The crab filling was creamy and the taco had the perfect texture; the crunchiness from the taco shell, the creaminess from the spanner crab filling and the burst of flavour from the tobiko.

Salmon Ceviche
We are not usually huge fans of raw dishes but the Salmon Ceviche was fan-freaking-tastic. It was well seasoned, cured perfectly and the potato crisps were extremely crunchy. Put a little but of the salmon ceviche on the potato crisp and viola, you have a perfect mouthful of flavour and texture in your mouth.

Burrata
Burrata is a fresh Italian cow milk cheese made from mozzarella and cream. The burrata was served with salsa verde and green tomatoes. This was the first time we tried green tomatoes and it wasn't as acidic as red tomatoes and rather, tastes quite hard. I felt this dish needed to be accompanied with something so I grabbed the potato crisp from the earlier dish and enjoyed it with the cheese.

Jamon Mozzarella Croquettes
Next on the menu were the croquettes which was extremely cheesy, gooey and quite moreish. Croquettes are best eaten fresh whilst it's still piping hot and crunchy.

1.2kg Crispy Pork Knuckle with Seeded Soy Mustard
As soon as we saw the pork knuckle on the menu, we knew it would be the star of the night and we were so keen to try it. When we could smell this dish, our eyes (or at least, my attention) was starring at the kitchen and at each dish being placed in front of guests. We couldn't wait to dig in but needed some assistance. The waitress patiently waited for us and watched as the pork fell off the bone. The skin was crispy, pork fell off the bone, the seeded soy mustard was sweet, strong and addictive. I would order and recommend the pork knuckle to friends and family.

Overall, we had a pleasant time with great company at Stanton & Co. Happy first birthday and good luck with the menu revamp.
